This is what happens when I don’t know what to make for dinner and I just have odds and ends to work with. Hope you enjoy this delicious and semi-healthy dinner for the whole family!
Prep Time: 10 – 15 minutes
Cook Time: 25 – 40 minutes
1 Diced Bell Pepper
1 Cup Chopped Green Beans
2 Diced Carrots
1 Cup Spinach
1/2 Onion
1 Cup Peas
1 Cup Ground Beef, Diced Steak, or Cubed Chicken
1 Cup Uncooked Rice
1 Tablespoon Asian Sauce with Soja
1 Concentrated Balsamic Vinaigrette
3 Teaspoon Granulated Garlic
2 Teaspoons Italian Herbs
1 Tablespoon Butter
1 Tablespoon Oil
3 Teaspoons Salt
Optional: 1 Cup Broccoli
First, sauté chopped carrots, bell pepper, and green beans in half a tablespoon butter, one teaspoon Italian herbs, and one teaspoon salt until semi-tender. While sautéing, prepare rice according to package directions. I prepare my rice with one teaspoon salt, half tablespoon butter, and one teaspoon granulated garlic along with given directions on package. Once above veggies are semi-tender, add diced onion, the meat of your choice, peas, Asian sauce, concentrated balsamic vinaigrette, one teaspoon of garlic, and one teaspoon of Italian Herbs. Next, once the meat is almost-all-the-way cooked, add spinach, cooked rice, one teaspoon garlic, one teaspoon salt, and one tablespoon oil. Once all is evenly mixed and cooked, add additional salt and pepper to taste and enjoy a delicious dinner!
BONUS:
If you have leftovers, in the morning take half a cup or so if this dinner and mix with two eggs for an amazing omelet for breakfast!
