Start your day off on the right foot with this delicious and protein packed breakfast. I was inspired to make this dish while visiting a beautiful Spanish coffee shop in Valencia, Spain. They served a similar meal on their breakfast menu, but I simplified it and added a little more of an Italian vibe to it. I hope you enjoy this amazing and lite breakfast egg sandwich as much as I did.

2 Slices of Bread
1 Slice of Mozzarella
1 Teaspoon of Parmesan
1/2 Teaspoon Granulated Garlic
1 Teaspoon Italian Herbs of your Choice
2 Teaspoons Butter or Oil
Optional: Spinach, Arugula, Tomato, or Chives
First, grill the slices of bread with a light coating of the butter or oil. Once grilled, place slice of mozzarella between the two slices and set aside on a plate for the cheese to melt. Next crack egg in skillet with melted butter or oil. The goal is a sunny-side-up-style egg. While the egg is in the skillet, evenly sprinkle parmesan, Italian herbs, garlic, and salt on the egg. Once cooked to your preference, place the egg between the two grilled slices of bread. Add spinach, arugula, tomato, or chives (optional). Enjoy a delicious, protein rich, healthy meal!
